Cassava is the starchy tuber produced by the tropical plant Manihot esculenta, also known as manioc, and an important staple food in many tropical regions. Cassava tubers are a good source of carbohydrate and vitamin C, but low in protein, minerals and other vitamins. The tubers are the source of tapioca starch, while the leaves can be eaten as a vegetable in soups and stews. Fresh roots and leaves, particularly those from bitter varieties, contain cyanogenic compounds and must be properly processed to be safe.
