Carob pods
Carob pods are the long pods from the carob tree, Ceratonia siliqua, containing seeds, the carob beans, encased in a soft, sticky pulp. The pulp is high in sugar and has a taste similar to chocolate, though milder and naturally caffeine-free. Powdered pulp is marketed as a chocolate substitute and is also used in the manufacture of beverages and syrups. Carob’s sweetness means less added sugar is needed, and its fibre content adds nutritional appeal for health-oriented confectionery and baking.
