Cardamom
Cardamom is the spice of green pods containing numerous aromatic seeds, produced by Elettaria cardamomum, a shrub belonging to the ginger family. Pods and seeds are used extensively in flavourings for both sweet and savoury dishes, particularly in Indian and Middle Eastern cuisine, from curries and rice dishes to Scandinavian buns and Arabic coffee. White, bleached pods are also available for lighter-coloured preparations. Its complex, eucalyptus-like aroma makes it one of the world’s most prized and expensive spices. Buyers should store it in airtight containers, since its volatile aroma fades quickly once ground.
