Camphene
Camphene is a monoterpenoid which is one of the flavour compounds present in a wide range of herbs and spices. As part of the volatile essential-oil fraction, it contributes fresh, camphoraceous, slightly woody notes to the aroma of plants such as nutmeg, ginger and various culinary herbs. Like other terpenes, it is present at low concentrations but helps define the characteristic scent profile of the seasonings that contain it. Its presence is one of many small details flavour analysts use to characterize spice quality and authenticity.
