Burfi
Burfi is another term for burfee, the concentrated milk sweet prepared from khoa. These dense, fudge-like confections are made by cooking milk solids with sugar into a smooth mass that sets on cooling, then cutting it into squares or diamonds. Burfi comes in many flavoured varieties, including plain, pistachio, chocolate and coconut, and it is central to festive and celebratory food in South Asia. Its high milk-solids content makes it nutritious but also perishable, so it is best kept cool and eaten fresh within a few days.
