Buffalo meat
Buffalo meat is meat from buffaloes, principally the domesticated water buffalo of Asia. It is an important source of animal protein in parts of South and Southeast Asia, where it is used in curries, minced products, sausages and processed meats. Buffalo meat is typically lean, with a flavour and texture close to beef. Because water buffalo can carry the same food-safety hazards as cattle, including zoonotic pathogens and parasites, hygienic slaughter, proper chilling and thorough cooking are just as essential as for beef.
