Brown trout
Brown trout is the freshwater form of the species Salmo trutta. It also has a silver-bodied migratory form, the sea trout, which swims out to sea for a period of feeding before returning to freshwater to spawn. Brown trout are marketed fresh, frozen or smoked and are prized by anglers and consumers for their delicate, subtly flavoured flesh. Like all fish, they are highly perishable: rapid chilling after capture and an unbroken cold chain through processing and retail are essential to maintain texture, flavour and microbiological safety.
