Breadings

Breadings are breadcrumbs and other types of crumb used in breading foods, usually before frying or baking. They range from fine dried crumbs to coarse fresh crumbs and Japanese-style panko, and they may be plain or seasoned with herbs, spices or cheese. During cooking, the breading forms a crisp outer layer that protects the food’s moisture and contributes colour, crunch and flavour to the finished product. The choice of crumb size and composition affects coating adhesion, oil uptake and final texture, making breadings a small but technically important ingredient in fried and baked foods.
