Brassica seeds are the oilseeds produced by plants of the genus Brassica, principally rapeseeds and mustard seeds. They are crushed to extract vegetable oils for food and industrial use, leaving protein-rich meals that are used in animal feeds. The nutritional and safety profile of these seeds has been greatly improved by plant breeding: modern low-erucic-acid, low-glucosinolate varieties, the type sold as canola in many countries, yield oils considered safe and wholesome for everyday cooking, while the older high-erucic types are restricted to industrial applications. Seed quality, in terms of oil content and purity, is a key commercial specification.
