Bluefish (Pomatomus saltatrix) is a marine species of high commercial value in the family Pomatomidae, widely distributed through the world’s oceans except the eastern and north-western Pacific. it is a voracious predator popular with anglers and commercial fishers alike. Marketed mainly fresh, but also frozen, dried or salted, it has rich, oily flesh that must be chilled rapidly and eaten fresh for best quality, since its high oil content makes it perishable.
