Blue whiting
Blue whiting is a marine fish species (Micromesistius poutassou) from the cod family (Gadidae), widely distributed across the northern Atlantic Ocean and also occurring in the western Mediterranean Sea. It has tender white fine-textured flesh with a delicate flaky flavour, marketed fresh and frozen, mainly headed and gutted, and is also reduced to fish oil and fishmeal. Abundant and fast-growing, it is among Europe’s largest fisheries by volume, managed by international quotas. Its soft texture suits fish fingers, surimi, and ready meals, while proper chilling from catch preserves the delicate quality that makes it a versatile whitefish for processing.
