Blancmanges are sweetened cooked milk desserts, thickened with cornflour or gelatin and flavoured — vanilla or almond, for example. Served cold with sauces or fruit toppings, they are among the simplest starch- or gelatin-set desserts, with texture governed by the concentration and type of gelling agent: cornflour gives a soft, spoonable set while gelatin gives a firmer, trembling one. Their delicate dairy base demands pasteurised milk, hygienic preparation, and continuous refrigeration, since the high moisture and neutral pH support rapid microbial growth. Classic yet adaptable, blancmange remains a template for modern panna cotta and other chilled set desserts.
