Bitto is an Italian artisanal cheese of cow milk — or cow milk with not more than 10 percent goat milk — with Denomination of Origin status. Its rind is characteristically straw-yellow, deepening with ripening; texture and flavour change with age — young cheese is soft, sweet and slightly aromatic, while older cheese turns piquant and firmer. Used in local cooked dishes and salads, it reflects the Alpine pastures of Lombardy where it is made. As a protected artisanal cheese, its production follows traditional methods that link the final flavour to mountain grazing and seasonal milk.
