Bison are humpbacked, shaggy-coated bovids. The two species are North America’s bison (Bison bison) and the European bison (B. bonasus). Game farms rear bison for meat production, particularly in the USA and Canada, where ranching has revived populations once hunted to near extinction. Managed under game-meat hygiene regulations covering slaughter, inspection, and processing, farmed bison supply a lean red meat to speciality markets.
