Balsamic vinegar is a richly flavoured dark vinegar from Modena in northern Italy, made by slowly ageing grape juice in wooden casks. Traditional balsamic matures for twelve years or more through a series of progressively smaller barrels, developing syrupy sweetness, woody complexity, and remarkable depth. Frequently used in salad dressings and marinades, genuine aged balsamic carries protected designation of origin status, while everyday grades blend wine vinegar with concentrated grape must for a similar sweet-sour profile at lower cost. Quality hinges on the grape must base and patient ageing; imitations built on caramel colour and flavourings cannot match the layered character of the traditional product.
