Ass milk
Ass milk, or donkey milk, is milk obtained from domesticated asses and is notably close to human milk in composition, with relatively low fat, modest protein, and a favourable whey-to-casein balance. Traditionally consumed in parts of the Mediterranean, the Balkans, and Asia, it is now marketed as a hypoallergenic alternative for children with cow milk protein allergy, since its protein profile differs enough to be tolerated by some sensitive individuals. Its niche status keeps production small-scale and artisanal, with correspondingly high prices. As with all raw milks, pasteurisation and hygienic milking are essential, and producers must meet the same microbiological standards applied to other dairy species.
