Appetite
The natural desire for food — the psychological and physiological drive that initiates eating, distinct from hunger yet intertwined with it. It rises with hunger and falls with satiety, orchestrated by hormones including ghrelin and leptin acting on brain centres, and it is shaped over time by learning, culture, habit and physiological state; cravings are its most intense, specific form. Food developers study appetite deliberately: portion size, variety, palatability, aroma and even plate colour all modulate how much is eaten. Understanding appetite regulation also matters clinically, from managing obesity to restoring eating in illness and ageing.
