The spice obtained from the dried unripe fruits of the tropical tree Pimenta officinalis (syn. P. dioica) — also called pimento or Jamaican pepper — whose flavour recalls a blend of cinnamon, cloves, nutmeg, ginger and pepper, as if the spice rack had been combined in one berry. It seasons meat products, bakery goods, pickles and flavourings, and its eugenol-rich essential oil lends both warmth and mild antimicrobial character. A cornerstone of Caribbean cooking and of Anglo-American baking spice blends, allspice is the rare spice named for tasting like several others at once.
