Vegetable preserves — canned tomatoes, bottled peppers, dried mushrooms — stabilize perishable produce through heat sterilization, reduced water activity, or acidity, enabling year-round availability. Commercial canning applies validated thermal processes matched to product acidity: low-acid vegetables require pressure sterilization to destroy Clostridium botulinum spores, while acidified products need only boiling-water processing.
