Salad cream
Salad cream is a salad dressing similar to mayonnaise but of a more fluid, pourable consistency. Its major ingredients are water, vinegar, and oils, with egg yolks and mustard providing the characteristic yellow colour and emulsified body. Popular in Britain as a sandwich and salad accompaniment, its acidity and oil content give it keeping quality at room temperature before opening. Once opened it needs refrigeration, like other egg-containing dressings, to stay safe. Its tangy, mustardy flavour distinguishes it from mayonnaise, and it is a classic accompaniment to chips and salads in Britain. Commercial recipes are pasteurized and acidified for safety, and the product should be refrigerated after opening.
