Pickled cucumbers

Pickled cucumbers is an alternative term for cucumber pickles, cucumbers preserved by fermentation in brine or by acidification in vinegar. They range from dill pickles and gherkins to sweet and bread-and-butter styles, seasoned with spices, garlic, and herbs. In food processing, cucumber pickling relies on lactic acid fermentation, direct acidification, or a combination, with salt concentration, acidity, and temperature controlling texture, flavor, and safety.
