Milkfish
Milkfish, Chanos chanos, is a marine fish species widely distributed in the Indo-Pacific and a commercially important food fish in Southeast Asian countries, especially the Philippines, Indonesia, and Taiwan. Its flesh is white and tender but famously bony, so processors often debone it or sell it as boneless bangus, and it is marketed fresh or frozen and used to make fish cakes and surimi. Aquaculture in ponds and cages dominates supply, where feed quality and water management determine safety and flesh quality. Like other farmed fish, it is monitored for veterinary drug residues, heavy metals, and microbial quality before it reaches markets.
