Methylamine

Methylamine is a simple amine found at low levels in a wide range of foods and beverages, including fish, meat, and fermented products. It forms from the breakdown of nitrogen-containing compounds such as trimethylamine oxide and creatine, and it is often grouped with the biogenic amines in food analysis. Elevated levels can signal microbial spoilage, particularly in fish, where amines accumulate as quality declines and are used alongside total volatile base nitrogen as freshness indices. Analysts measure methylamine and related amines by chromatography to assess freshness, and toxicologists study high exposures because of its irritant properties. Good chilling and hygiene keep amine formation in seafood within acceptable bounds.
