Maturity
Maturity is an alternative term for ripeness: the stage at which a fruit, vegetable or crop has developed the full flavour, colour, texture, composition and nutritional value appropriate for its intended use. Harvesting at correct maturity is critical — immature produce lacks flavour, sweetness and colour, while overmature produce softens, spoils quickly and may develop off-flavours — so growers use maturity indices (Brix, acidity, firmness, starch-iodine, colour charts, days from bloom) to time picking. Maturity at harvest determines storage potential, processing suitability (e.g. pectin levels for jam, dry matter for frying potatoes) and final eating quality; post-harvest ripening rooms bring climacteric fruit to edible ripeness.
