Macruronus novaezelandiae, a hake-family marine fish of the southwest Pacific, ranging through the southwest Pacific, from South Australia to New Zealand. It is a commercially significant food fish, it sells fresh or frozen as fillets and frequently goes into fish blocks destined for fish fingers and other ready-to-cook products. It is valued for its mild flavour and flaky white flesh, which suit breaded and battered applications. As with all whitefish, rapid chilling after catch and careful frozen storage protect its texture and prevent the softening and off-flavours that develop when cold-chain discipline lapses.
