Hawthorn juices

Hawthorn juices are fruit juices prepared from hawthorn fruits of Crataegus species, valued for their tart flavour, deep colour and traditional health associations. Production follows standard juice technology: washing, crushing, pressing or extraction, clarification as desired, and pasteurisation for microbial safety, with the fruit’s natural acidity assisting preservation. They are consumed as beverages, blended into mixed fruit drinks, or used in jellies and confectionery. Quality control focuses on authentic fruit content, since the strong flavour invites dilution, and on hygienic processing of what is often a wild-harvested raw material.
