History of HACCP

The HACCP concept originated during the 1960s through a collaboration between Pillsbury, NASA, and the U.S. Army Natick Laboratories. The objective was to develop a food safety system capable of producing food with an extremely high level of safety for space missions.

Since then, HACCP has evolved into the internationally accepted framework for preventive food safety management. It is embedded within the Codex Alimentarius Commission’s General Principles of Food Hygiene (CXC 1-1969, Annex on HACCP) and has been adopted by governments, regulatory agencies, and the global food industry.
