Any of several marine fish species of the genus Seriola (family Carangidae); distributed across warmer regions of the Atlantic and Pacific oceans. The most important food fish species in commercial terms is S. quinqueradiata, which is cultured on a large scale in Japan. Marketed fresh, salted and dried; also canned (smoked flesh packed in oils). Also known as amber-jack.
