A part of edible offal, often sourced from calves, lambs, oxen and pigs. Tenderness, flavour and texture vary with species and age of the source animal. Tongues may be sold fresh or brined; brining produces a pink colour and intensifies flavour. They are eaten hot or cold after boiling, skinning and slicing, or are used to produce meat products, such as brawn.
