Cream cheese-type fermented foods made from tofu and eaten widely in China. Fermentation of tofu is carried out commercially using Actinomucor elegans, followed by brining and ageing. Sufu is eaten as an appetizer, as a relish, cooked with vegetables or meat, or in the same manner as cheese.
